I've read a lot of various recipes for Matza Pancakes, but none of them actually worked for our tastes. So this is a combination of several of those that make it just like my family likes it. This usually makes 10-12 small pancakes (each of my boys will eat four of them) and I'll make 2-3 batches depending on who is eating that morning. I also recommend making them one batch at a time because larger or doubled batches seem to get gunky (is that a word).
Matza Pancakes recipe
Ingredients:
3 Eggs
1 1/4 cup Milk
1/3 cup Sugar (or we use Splenda)
1/2 tsp Salt
1/2 tsp Cinnamon Sugar
1 cup Matza Meal
Directions :
Beat Eggs
Add Milk, Sugar, Salt, Cinnamon Sugar; mix well
Add Matza Meal, mix until smooth (no lumps)
Heat pan sprayed with cooking spray
Drop onto pan into small circles (about 4 inches diameter)
Flip until done
Serve with butter and syrup, or peanut butter, or powdered sugar, or apple sauce, or...you get the idea. Now on a side note, remember that this is not 'health' food. :) And I slathered the butter on so it would show up for the pictures (but it was really good this way, too).
